Baked Apples with Prunes & Walnuts
Preheat the oven to 200C / Gas 6. Halve the apples horizontally and scoop out the core, using a melon baller, without cutting through, to form a cavity for the filling.
In a bowl, mix the prunes and walnuts with the soft butter, then use to fill the apple cavities, packing it in and pilling it up well. Sprinkle with sugar. Place the apples on a baking tray and bake in the oven for 6-8 minutes until they have started to soften and the butter has melted. Preheat the grill, meanwhile.
Place the tray of apples under the grill until the sugar is caramelised and golden brown, about 3 minutes. Leave to stand for about 5 minutes before serving.
